YAM PUDDING 
6 lg. yams
1/4 c. butter
1/4 c. brown sugar
2 tsp. grated fresh lemon rind
1 tbsp. fresh lemon juice
1/2 tsp. salt
1/2 c. slivered almonds

Bake yams in 400 oven on cookie tin until soft - approximately 1 hour. Remove potato meat from skins and whip with next 5 ingredients. Top with slivered almonds.

This is part of our Thanksgiving tradition.
