CREAM DE MENTHE ICE CREAM CAKE 
15 Oreo cookies
1 c. chocolate chips
1 stick butter
3 eggs
2 c. powdered sugar
3/4 c. chopped nuts
1/2 gallon vanilla ice cream
3 oz. green creme de menthe

Crush Oreo cookies in ungreased 13 x 9 x 2 inch pan. Melt chocolate chips and butter in saucepan. Beat eggs in mixer bowl until frothy. Add small amount melted chocolate; then add to remaining chocolate and cook until thickened. Add to 2 cups powdered sugar and beat until smooth. Stir in nuts. Pour oven Oreos and freeze. Soften ice cream and add creme de menthe, mixing well. Pour over chocolate mixture and return to freezer. Top with cookie crumbs or shaved chocolate.
