HAM GRAVY (FAMILY FAVORITE!) 
For this recipe, I don't use exact measurements as I always have to make a large amount of this gravy. It seems no matter how big a batch I make there is barely enough to satisfy my brood, and I have never had leftover ham gravy!

ham drippings (or ham soup base, dissolved)
pineapple juice (equal to the amount of ham liquid)
brown sugar (start with a half a cup and add more to taste)
a dash of liquid smoke
cornstarch (or flour), for thickener

Bring drippings or dissolved ham base, pineapple juice, brown sugar and liquid smoke to a simmering boil. Taste to make sure it suits you... add a bit more sugar if it's too salty, a bit more dissolved ham base if it's too sweet. Once it tastes right add in your thickener. Serve immediately over mashed potatoes and ham.
