HOT AND SPICY MARINATED CHICKEN | |
2 whole boneless chicken breasts, halved and trimmed 1 clove garlic 1/4 c. minced onion 1 tsp. salt 1/4 tsp. white pepper 3/4 tsp. oregano 1/4 tsp. basil 1/4 tsp. hot red pepper flakes 1/2 c. sherry 2 tbsp. olive oil 1/2 lb. spaghetti In a bowl, toss chicken well in olive oil. Add remaining ingredients, coating well. Let chicken marinate, covered and chill for at least 1 hour and up to 2 hours. Transfer chicken with marinade to a flame-proof flat dish just large enough to hold it in one layer and broil under a preheated broiler, about 3 inches from heat 6 to 8 minutes or until cooked through. Serve chicken and marinade over cooked spaghetti. Serves 4. |
