STRAWBERRY PARFAIT PIE 
1 (3 oz.) pkg. strawberry Jello
1 1/4 c. boiling water
1 (10 oz.) pkg. frozen strawberries
1 pt. vanilla ice cream

TOPPING:

1 pt. whipping cream or all-purpose cream
1/2 c. confectioners' sugar
1 tsp. vanilla

Thaw and drain strawberries. (Juice may be saved to substitute for some of the water.) In mixing bowl, dissolve Jello in boiling water. Dissolve ice cream in Jello. Refrigerate until slightly thickened. Time varies. Add drained strawberries. Pour mixture into baked pie shell.

To prepare filling: Beat whipping cream until it forms peaks. Then add vanilla and confectioners' sugar. Spread on top of pie. If desired, garnish with fresh strawberries or toasted coconut. Refrigerate.

Variation: Raspberries may be used instead of strawberries.
