MOCK PECAN PIE 
3 eggs
2/3 c. white sugar
2/3 c. brown sugar
3 tbsp. butter
2/3 c. oatmeal
2/3 c. coconut
1 tsp. vanilla

Beat eggs; add sugars and butter. Mix until creamy. Combine oatmeal, coconut and vanilla; fold into creamed mixture.

PASTRY:

3 c. flour
1 1/4 c. melted lard
1 tsp. salt
1 egg, beaten
5 tbsp. cold water
1 tbsp. vinegar

Mix ingredients for pie crust; chill. Yield: 6 servings.
