PICADILLO (MEAT HASH) 
1 lb. ground chuck
3 tbsp. fat drippings from bacon
1/4 lb. ground ham
1/2 c. chopped onions
1 tbsp. minced fresh garlic
1/2 c. chopped green bell pepper
1 1/4 tsp. ground cumin
2 tbsp. tomato sauce
1/2 tsp. vinegar
1 potato, chopped into 1/4 to 1/2 inch cubes
1/4 c. raisins
1/4 c. chopped olives
4 eggs, cooked sunny side up

Cook ground chuck in bacon drippings until it begins to brown, separating it so no chunks remain. Drain off excess fat. Add ham, onion, garlic and green pepper and cook until onions are translucent. Add cumin, tomato sauce and vinegar to meat and mix well.

In a separate pan, fry potato pieces until they are brown and add them to the meat along with raisins and olives. Place a sunny side egg over the rice. Serve immediately with white rice. Serves 4.
