4 med. potatoes, grated 1 med. chopped onion 1 to 2 c. shredded or chopped leftover meat 2 to 3 tbsp. shortening 3 tbsp. butter 1 c. sour cream or plain yogurt 3 tbsp. Worcestershire sauce Preheat broiler. Using a skillet with an ovenproof handle, melt shortening over medium heat. Mix potatoes, onions and meat and pour into skillet with shortening. Brown on bottom without stirring. Drizzle melted butter over top and brown in broiler. Serve with ketchup or mix sour cream and Worcestershire sauce. Serves 4 to 6 people. |
