MINI MEATLOAVES 'N VEGETABLES 
1 1/2 lbs. ground beef
1/2 tsp. salt
1 egg
1 (8 oz.) can tomato sauce
1/2 tsp. Italian seasoning
1 (2.8 oz.) can French fried onions
6 sm. red skin potatoes, sliced thin
1 (16 oz.) bag frozen broccoli, corn, red pepper combination, thawed, drained

Combine meat, salt, egg, 1/2 can tomato sauce, Italian seasoning and 1/2 can French fried onions.

In 9x13 inch pan, form 3 miniature meat loaves. Place potatoes around loaves. Bake, covered, at 375 degrees for 35 minutes.

Place vegetables around loaves; stir to combine with the potatoes. Lightly season with salt and pepper. Top meat with remaining tomato sauce. Bake uncovered, 15 minutes. Top loaves with remaining onions; bake, uncovered, 5 minutes longer. Makes 3 to 6 servings.
