MINI - SPINACH PIES 
10 oz. pkg. frozen spinach
6 eggs, beaten
3 oz. pkg. cream cheese
1/4 c. grated cheddar cheese
2 tbsp. chopped green onion
1 tbsp. parsley
Salt and pepper
16 miniature pastry shells, thawed

Preheat oven to 425 degrees. Cook spinach according to package directions. Drain. Combine eggs, cream cheese and cheddar cheese. Mix well. Stir in spinach, onion, parsley, salt and pepper. Pour into pastry shells. Bake 8 to 10 minutes. Let stand 8 to 10 minutes before serving.
