MINCEMEAT 
5 bowls apples
3 bowls meat
1 bowl suet
1 bowl molasses
1 bowl vinegar
2 bowls raisins
1 bowl currants
5 bowls white sugar
2 tbsp. cinnamon
2 tbsp. nutmeg
1 tbsp. each cloves, salt and pepper

Meat should be cooked and should be lean (tongue or heat boiled or steamed could be used - skin would be removed from tongue). Mix ingredients thoroughly, but do not cook. Store in jars in a cool place. NOTE: It is believed that "bowl" meant a quart bowl.
