ICED HERB TEA WITH GERANIUM
LEAVES
 
1 heaping tsp. each of dried herbs: lemon balm, orange mint, apple mint,
peppermint
1/2 tsp. chamomile flowers
1/2 tsp. comfrey leaves and stems
1 tsp. honey per cup
Ice cubes
Sprigs of fresh mints if available
Geranium leaves (scented) 1 per cup
5 c. water, boiling

Using stainless steel pan, bring water to boil, add herbs and return to boil, stirring twice while waiting boiling point. Remove from heat. Add honey(1 teaspoon per cup). Cover and steep 20 to 30 minutes. This makes double strength tea. (With additional of ice cubes, it will be sufficiently diluted). Strain into glass jug. Sprigs of fresh mints may be added at this time or add 1 geranium leaf per cup. Refrigerate until ready to serve. Pour over ice in punch bowl and add fresh sprigs or leaves in cups or in bowl.
