2 pkg. yeast
2 c. warm water (not hot)
1/2 c. sugar
2 tsp. salt
1 egg
1/4 c. shortening
6 1/2 to 7 c. flour

In mixing bowl, dissolve yeast with the warm water. Measure flour, add sugar, salt and half the flour to the yeast. Beat thoroughly for 2 minutes. Add egg and shortening. Gradually beat in remaining flour until smooth. Cover with a damp cloth, place in refrigerator. Punch down occasionally as the dough rises in the refrigerator.

About 2 hours before baking, cut off amount of dough needed and return remaining dough to refrigerator. Shape into rolls, place on a greased sheet. Brush top with melted butter. Let rise about 1 1/2 hours. If kitchen is cool, place dough on a rack over a bowl of hot water and cover completely with a towel. Bake at 400 degrees for 12-15 minutes.
