ZUCCHINI APPLE PIE 
4 cup Peeled & Seeded Sliced Zucchini
2 tbsp. Lemon Juice
Salt to Taste
1 1/4 cup Sugar
1 1/2 tsp. Cinnamon
Nutmeg to Taste
1 1/2 tsp. Cream of Tartar
3 tbsp. Flour
1-2 Crust Pie Pastry

Cook zucchini in boiling water until crisp. Drain well. Toss with lemon juice and salt. Combine sugar, cinnamon and cream of tartar, nutmeg and flour in large bowl. Mix well. Stir in zucchini. Line a 9-inch pie plate with pastry. Pour in zucchini mixture. Dot with butter. Top with remaining pastry.

Bake 400 for 40 minutes or until golden brown.

Tastes like apple pie.
