GRILLED VEGETABLE MEDLEY 
1 med. white onion, diced
1 zucchini
1 yellow squash
1 green pepper
1 red pepper
2 tomatoes
4 tbsp. tomato sauce
1/2 tsp. basil
1/2 tsp. oregano
1/8 tsp. salt (optional)
Pepper to taste
1 tbsp. Parmesan cheese

Cut vegetables, other than onion, into bite-size pieces. Divide all vegetables equally onto 4 sheets of aluminum foil. Sprinkle with herbs, salt, pepper and tomato sauce. Close foil by folding into pockets. Cook on grill about 15 minutes. Open pockets. Sprinkle with Parmesan cheese. Serve immediately. Serves 4.
