JAMS 
4 c. (2 lb.) prepared fruit
7 c. (3 lb.) sugar
1/2 bottle Certo

Plus 1/4 teaspoon almond extract (optional).

TO PREPARE FRUIT:

Crush completely, 1 layer at a time, about 2 quarts fully ripe berries. (If desired, sieve half of pulp.) Measure 4 cups pulp into LARGE saucepan.

TO MAKE JAM:

Add sugar to fruit in saucepan and mix well. Place over high heat, bring to a FULL ROLLING BOIL, and BOIL HARD 1 MINUTE, stirring constantly. Remove from heat and at once stir in Certo. Then stir and skim by turns for 5 minutes to cool sightly, to prevent floating fruit. Ladle quickly into glasses. Paraffin at once. Makes about 10 (6 ounce) glasses.

THE STEPS TO FOLLOW:

PREPARE THE FRUIT - Select only fully ripe fruit. Place in colander and wash well. Remove any unsound parts. Then prepare fruit exactly as directed in the recipe. Taste and if fruit lacks tartness, add 2 to 4 tablespoons lemon juice. (This improves both the flavor and set.)

JAM FROM CANNED FRUIT:

Use UNSWEETENED fruit. Follow recipe for fresh fruit jam, substituting 1/4 cup lemon juice for 1/4 cup of the prepared fruit. Use fresh fruit jam recipe.
