APRICOT BREAD 
1 c. apricots, cut into 1/4-inch pieces
1 c. sugar
2 tbsp. butter, softened
1 egg
1/4 c. orange juice
1/4 c. water
2 c. flour
2 tbsp. baking powder
1/4 tsp. baking soda
1/2 tsp. salt
1/2 c. chopped nuts

Soak apricots in warm water for 20-30 minutes. Mix together sugar and butter; add egg, orange juice and water. Sift dry ingredients together, then mix into batter. Stir in drained apricots and nuts by hand. Spoon into loaf pan and bake at 350 degrees for 1 hour or until cake tester comes out dry.
