ZUCCHINI BREAD | |
3 eggs 2 c. sugar 1 c. vegetable oil 2 c. grated zucchini 2 c. self rising flour 1 tbsp. vanilla 1 tsp. cinnamon 1 c. nuts (optional) Beat eggs until light and frothy. Add sugar, oil, and vanilla, mixing until thick. Add zucchini and stir well. Sift flour and cinnamon together and add to mixture and stirring until smooth. Add nuts if desired. Bake in 2 greased and floured loaf pans about 1 hour at 350 degrees. |
