ZUCCHINI CASSEROLE 
1 c. Bisquick
1/4 c. chopped onion
1 clove garlic (chopped)
1/2 c. grated Parmesan cheese
1/2 c. vegetable oil
1/2 tsp. salt
3 c. shredded zucchini
2 tbsp. parsley
1/2 tsp. oregano
4 eggs, slightly beaten

Mix all ingredients together. Pour into 9x9 lightly greased pan. Bake for 45 minutes at 325 degrees. Serve hot or cold with Cheddar cheese sauce on top or serve plain.
