TERRY'S SEAFOOD CASSEROLE 
1 sm. onion, minced
1/4 c. butter
3 tbsp. flour
1 1/2 tsp. salt
1/2 tsp. mustard
1/4 tsp. pepper
3 c. milk
4 c. sharp grated cheese
1/2 c. sherry
6 c. cooked chopped shrimp
1/4 c. lemon juice
1 lb. sm. shell macaroni, cooked
1 c. crushed saltine crackers

Saute onion in butter in saucepan. Blend in flour, salt, mustard and pepper. Add milk. Cook until thick, stirring constantly. Add 3 cups cheese, stirring until cheese is melted. Add sherry. Sprinkle shrimp with lemon juice. Alternate layers of macaroni, shrimp and cheese sauce in buttered casserole, ending with cheese sauce. Sprinkle with remaining cheese and cracker crumbs. Bake at 400 degrees for 35 minutes. Yield: 15 servings.
