RED VELVET CAKE 
1 1/2 c. sugar
1 1/2 c. salad oil
2 eggs, beaten
1 tsp. vinegar
2 1/2 c. flour
1 tsp. baking soda
1 tsp. salt
1/2 c. cocoa
1 c. buttermilk
1 (2 oz.) bottle red food coloring
1 tsp. vanilla

Cream the sugar and oil in a mixing bowl. Add eggs and beat well. Add the vinegar and food coloring and beat well. Sift the flour, baking soda, salt, and cocoa together and add to the creamed mixture alternately with buttermilk. Add vanilla and beat well. Pour into two greased and floured cake pans. Bake at 350 degrees for 30-35 minutes.

ICING:

1 stick butter
1 (8 oz.) pkg. cream cheese
1 box powdered sugar
1 c. chopped nuts
1 tsp. vanilla

Cream the butter and cream cheese in a bowl and add vanilla. Sift the powdered sugar and add to the creamed mixture gradually. Add nuts and mix well. Spread on top of cake layers and place layers together. Spread on side of cake.
