PEANUT BUTTER PIE | |
1 baked pie shell 1 c. confectioners' sugar 1/2 c. peanut butter (creamy) 1/4 c. cornstarch 2/3 c. sugar 1/4 tsp. salt 2 c. milk, scalded 3 egg yolks, beaten 1/4 tsp. vanilla 3 egg whites for meringue, plus 6 tbsp. sugar Combine confectioners' sugar and peanut butter, blend until the appearance of biscuit mix. Spread 3/4 of this mixture in the baked pie shell. Combine cornstarch, sugar and salt; add to scalded milk and mix well. Pour small amount over the beaten egg yolks and mix well; then return to the milk mixture. Cook in top of double boiler until mixture thickens. (Can do in saucepan but don't let it burn.) Add a dot of butter and the vanilla and pour into the pie shell over the peanut butter mix. Top with meringue made from beaten egg whites and sugar. Spread over the pie and sprinkle the remaining peanut butter mixture over it. Bake at 325 degrees until top is nicely browned. Cool and serve. |
