SAUSAGE AND EGG CASSEROLE 
1 lb. Jimmy Dean hot sausage
6 slices white bread, crust removed
1 stick butter (or more if needed)
1 1/2 c. Longhorn cheese, shredded
5 eggs
2 c. half and half
1 tsp. salt
1 tsp. dry mustard
1/2 c. fresh sauteed or dry onions
1/2 c. bell pepper, chopped and sauteed
1/2 c. sliced celery, sauteed
1 sm. jar diced pimentos
2/3 c. sliced mushrooms

Cook sausage in skillet until it crumbles and is brown, drain; add bell pepper, celery, onions and mushrooms to drippings and saute. Drain. Set aside.

Spread both sides of bread with butter and remove crust. Cut into cubes. Place bread cubes in a 13x9x2 inch glass baking dish. Sprinkle sausage, vegetables and pimientos.

Combine remaining ingredients and beat well; pour over top of mixture in pan and top with grated cheese. Chill at least 8 hours. Remove from refrigerator and bake at 350 degrees 40-50 minutes. Let rest 10-15 minutes before serving.
