FRUIT AND CHEESE SALAD 
1 c. cottage cheese (low-fat creamy style)
1/4 c. finely chopped celery
2 tbsp. chopped walnuts
1 tsp. lemon juice
1/4 c. pineapple chunks (juice packed), drained and chopped
4 whole dates, pitted and chopped

Mix cottage cheese and lemon juice in blender and blend until smooth. Stir in other ingredients and blend. Cover and chill.
