COTTAGE CHEESE JELLO SALAD 
16 oz. cottage cheese
3 oz. Jello
16 oz. fruit, drained
4 oz. Cool Whip
1/2 c. chopped pecans (optional)

Add dry Jello to cottage cheese and stir. Add fruit. Fold in Cool Whip. Add nuts either in or on top of salad. Let stand 15 minutes in cool place.

Variations: Lime Jello - pineapple chunks.

Apricot Jello - crushed pineapple.

Cherry Jello - fruit cocktail.

Strawberry Jello - mandarin oranges.

Low-cal cottage cheese, Jello, and fruit is good.

I like to use Orange Jello with Mandarin Oranges. You can also make it with sour cream instead of cottage cheese, but I like the texture of the cottage cheese.

My babysitter used to make this for my brother and I if she was watching us for a few days while my parents were out. She always used strawberry jello and used frozen berries. We love it!! I had to txt her not too long ago for the recipe, I'll probably be making this today :-)

My kids favorite is Orange Jello with crushed pineapple. It's very yummy and the crushed pineapple gives it a nice texture too! :)
