EASY CHEESY ENCHILADAS 
corn tortillas
grated sharp or Cheddar cheese
enchilada sauce
vegetable or olive oil

Open cans of enchilada sauce and put in a bowl. Put the cheese (graded) in another bowl. Heat enough oil in a skillet to fry tortillas. One tortilla at a time fry 20 seconds at a time on each side, take out tortilla and immediately dip in the enchilada sauce, submersing total tortilla.

Take out of sauce immediately and put the cheese down the middle and roll up. Put rolled enchiladas in a square cake pan. When finished rolling the enchiladas, pour the rest of enchilada sauce over the enchiladas and top with any remaining cheese.

Put in 350°F oven for 7 minutes. Take out and if you like top with chopped onion and black olives. Or enjoy them like that.
