LUSCIOUS BLUEBERRY CAKE 
3 c. sifted flour
2 tsp. baking powder
1/2 tsp. salt
1 c. shortening
1 1/2 c. sugar
3 eggs, separated
2 tsp. vanilla
2/3 c. milk
3 c. blueberries
1 tbsp. flour
1/2 c. sugar
1/2 c. powdered sugar

Preheat oven to 350 degrees. Sift together flour, baking powder, and salt. Cream shortening and 1 1/2 cups sugar until light and fluffy. Add egg yolks and vanilla; blend well. Beat egg whites until stiff. Gradually beat in 1/2 cup of sugar. Fold into batter. Combine blueberries and 1 tablespoon flour. Fold into batter. Pour into greased and floured pan. After removing from oven after baking for 50 minutes at 350 degrees in a 13 x 9 x 2 inch pan, dust with powdered sugar. Let cool; cut into squares. Serves 20. May be frozen, takes approximately 1 hour to thaw.
