PERSIMMON COOKIES 
1 c. persimmon pulp (skin removed)
1 tsp. baking soda, mix with pulp
1 c. white sugar
1/2 c. shortening
1 egg, beaten
2 c. flour
1 tsp. cinnamon
1/2 tsp. cloves
1/2 tsp. nutmeg
1/2 tsp. salt
1 c. nuts, chopped
1 c. raisins

Beat persimmon pulp, sugar and shortening together until creamy. Add beaten egg. Add flour and spices (sifted together), then nuts and raisins. Drop by spoonfuls onto greased baking sheet. Bake at 375 degrees for 10 to 12 minutes. Makes 3 dozen.
