CARAMEL CORN 
6 c. popped popcorn
1 c. packed brown sugar
1/2 c. butter
1/4 c. light corn syrup
1/2 tsp. baking soda
1 tbsp. vanilla
1/2 c. peanuts (optional)

Heat oven to 250 degrees. Put popcorn on 15 x 10 inch jelly roll pan. In large saucepan, combine brown sugar, butter, and corn syrup. Bring to a boil over medium heat. Boil 2 minutes, stirring constantly. Remove from heat. Add soda and vanilla; mix well. Pour over the popcorn and mix thoroughly. Bake 35 minutes. Stir once or twice while baking. Remove from pan immediately. Cool on sheet of foil. Store air-tight.
