PICKLED FISH | |
5 or 6 pounds fish (northern), cut into bite size pieces. Put into a gallon jar. Mix 3 cups white vinegar and 3/4 cup pickling salt. Pour over fish then refrigerate 5 or 6 days. Mix each day. 3 c. white vinegar 1 1/2 to 2 c. sugar 1 tbsp. pickling spice Wash fish in clear water to rinse out salt. Let set 1/2 hour. Put fish in alternating with onion rings. Pour sugar solution over fish. Refrigerate 5 more days. Shake each day so it doesn't pack down. |
