ZUCCHINI BREAD 
2 c. shredded zucchini (leave the skins on)
2 c. sugar
1 c. oil
3 eggs
1 tsp. vanilla

Combine above ingredients. Blend in:

3 c. flour
1 tsp. baking soda
1 tsp. baking powder
1 tsp. cinnamon
1 tsp. cloves
1 tsp. ginger
1/2 tsp. salt

Bake one hour in a loaf pan at 325 degrees.

My changes, in order to have a more healthy treat, are the following:

1. Use less than half the sugar. I use about 2/3 cup and add lots of raisins which add plenty of sweetness.

2. Use twice the spices called for. This also works well when the sugar is decreased.

3. If you don't have enough zucchini, use other shredded fruits or vegetables instead, such as carrots or apples. Carrots add their own sweetness; the apples can, too, depending on what kind you use.
