ZUCCHINI BREAD | |
2 1/2 c. shredded zucchini 3 eggs 1 c. salad oil 1 1/2 c. sugar 1 tsp. vanilla 3 c. flour 1 1/4 tsp. baking soda 1/2 tsp. baking powder 1 tsp. salt 1 tbsp. cinnamon 1/2 c. chopped walnuts 1/2 c. raisins or dates I add 1/2 cup crushed drained pineapple and about 3/4 cup finely shredded carrots. Can leave out dates and raisins if you like. Mix zucchini with eggs and salad oil, sugar and vanilla. Blend well. Add sifted dry ingredients to zucchini mixture. Stir only until well moistened. Add pineapple and carrots, fold in nuts (raisins and dates). Pour into 2 greased and floured 9 x 5 x 2 loaf pans or any other pans. Bake at 350 degrees for 50-60 minutes until toothpick comes out clean. |
