1 lb. lean ground beef 3 c. tomato sauce 1/4 c. minced onion 1 tsp. basil 1 tsp. chopped parsley 1/2 tsp. oregano 1/4 tsp. garlic powder or 1 clove garlic, minced Ground black pepper 1 (4 oz.) can chopped mushrooms 1 (10 oz.) pkg. frozen spinach, chopped, thawed and well drained 8 oz. low fat cottage cheese 4 oz. skimmed milk Mozzarella grated cheese 1/2 lb. lasagna noodles In a medium sized non-stick skillet, saute ground meat and onion until onion is tender and meat is browned. Do not add fat or oil to skillet. Add tomato sauce, basil, parsley, oregano, garlic pepper, and mushrooms to ground meat mixture. Combine well drained spinach with cottage cheese. Cook 1/2 pound noodles in boiling water until tender. Lightly oil 8 x 13 inch baking dish. Arrange in layers beginning with 1/2 noodles on the bottom. Spread a layer of the spinach mixture, then the meat mixture, and then the Mozzarella cheese. Repeat layers ending with cheese on top. Bake at 375 degrees for 15-20 minutes or until hot and bubbly. Yields 6 servings. Approximately 405 calories. |
