OVEN - FRIED CHICKEN 
1 fryer, cut up (or use chicken breast)
1 stick butter, melted
2 or more c. instant potato flakes
Salt and pepper

Wash chicken and lay on paper towels and pat dry. Salt and pepper chicken; dip in butter, then roll in potato flakes. Put on a large cookie sheet. Bake in 350 degree oven for 1 hour. Drain off excess grease. Turn chicken over and bake an additional 15 minutes. Good! and so easy.
