OATMEAL PECAN COFFEE CAKE 
1 c. quick Quaker oats
1 1/2 c. boiling water
1/2 c. shortening
1 c. brown sugar
1 c. white sugar
2 beaten eggs
1 1/3 c. sifted flour
1 tsp. cinnamon
1 tsp. baking soda
1/2 tsp. salt
1/2-1 c. white raisins, optional

Pour water over oats and let stand while you prepare the rest. Cream shortening and sugar. Add eggs, flour, cinnamon, soda, salt, raisins and oatmeal; mix. Bake at 350 degrees for 30 minutes in a greased baking dish or pan.

TOPPING:

Melt together: 1/4 c. cream or Pet milk 1/2 c. brown sugar 1/2 tsp. vanilla 1 c. pecans

Spread on warm cake. Slide under broiler to caramelize. Watch carefully.
