SHOE PEG CORN CASSEROLE 
1/2 c. chopped onion
1/2 c. chopped celery
1/2 c. grated sharp Cheddar cheese
1 can shoe peg corn, drained
1 can French style green beans, drained
1 can cream of celery soup
1 carton sour cream
Salt & pepper to taste

Mix together above ingredients. Top with 1 stack Ritz crackers, crushed. Dot with butter 1/2-3/4 stick. Bake in flat casserole at 350 degrees for 45 minutes.
