MINI PARTY PUFFS | |
1 cup water 1/2 cup butter 1 cup sifted all purpose flour pinch salt 4 eggs chicken, shrimp or salmon salad Preheat oven to 375°F. Bring water to a boil. Add butter, stirring until melted. Add flour and salt all at once. Using a large wooden or silicone spoon, stir very well until mixture is smooth and forms a soft ball, making sure to stir in mixture along edges. Remove from heat and allow to cool slightly. Add eggs, one at a time, beating well after each addition. After the last egg is added, continue beating until mixture becomes shiny. Drop the batter by teaspoonfuls onto a lightly greased baking sheet to make 36 small puffs. Bake in for 50 minutes in preheated oven. When cool fill with chicken, shrimp or salmon salad or your favorite sweet filling, such as whipped sweetened cream cheese or whipped cream flavored with rum. Makes about 3 dozen Mini Party Puffs.
