“MOLASSES BRAN MUFFINS” IS IN:

MOLASSES BRAN MUFFINS 
2 cups all-bran
2/3 cup molasses
1 tbsp. rum (or 1 tsp. vanilla)
1 tsp. ground ginger (optional)
1/2 cup milk
1 egg (beaten)
1 cup sifted all-purpose flour
1/2 tsp. salt
1 tsp. baking soda
1 cup raisins

Measure all-bran into a bowl. Stir together molasses, rum or vanilla and milk.

Allow mixture to soak for 15 minutes.

Add beaten egg. Whisk remaining dry ingredients together and stir into bran mixture. Add raisins, mix thoroughly. Fill greased muffin pan 2/3 full and bake in preheated 400°F oven for about 20 minutes.

Note: If you prefer sweeter bran muffins, a tablespoon or two of sugar or honey can be added to the batter.
