FRIED CHEESE PUFFS 
1/2 cup all-purpose flour
1 tsp. baking powder
1/4 tsp. salt
dash cayenne pepper
1 1/2 oz. butter
1 oz. grated cheese
1 egg, beaten
cold water
additional grated cheese

Sift dry ingredients, rub in butter, add cheese and mix to a soft dough with beaten egg and a little cold water. Roll out to about 1/4-inch thickness, cut into small rounds.

Fry in hot oil until golden brown. Drain on paper towels. Toss in finely grated cheese and serve hot.
