SALMON PATTIES 
1 lg. can salmon
1 lg. onion, diced
1 stack saltine crackers, rolled into crumbs (fine)
1 egg, beaten

Drain salmon; remove all bones and black skin material. Mash with fork. Now add onion, ground up crackers, and beaten egg. Shape into balls; flatten into patties. Fry in cooking oil in skillet, turning gently. Brown thoroughly.
