SALMON PATTIES 
1 can salmon
1/2 tsp. pepper
8 saltine crackers, finely crushed
1/4 c. milk
1/4 tsp. salt
1 tsp. lemon juice
2 eggs, beaten
2 tbsp. chopped parsley
2 tbsp. butter (optional)

Preheat skillet. Flake salmon and add all the above ingredients. Shape into patties. Melt butter (or use shortening or butter) and fry patties until brown.
