1 lb. fresh beets, cooked and sliced or canned
1/4 c. sugar
1/4 c. vinegar
3 tbsp. water
3/4 of a sm. onion, diced
Salt and pepper to taste

Boil beets approximately 1 hour (depending on size). Slice and set aside. Canned beets may also be used. Combine sugar, vinegar and water. Add beets, onions, salt and pepper. Marinate approximately 8 hours.
