COCONUT-PINEAPPLE SQUARES 
1 (No. 2) can crushed pineapple, drained (save juice)
1/2 c. shortening
3/4 c. sugar
2 eggs
Pineapple juice
2 c. flour
1 tsp. baking powder
1/2 tsp. baking soda
1/4 tsp. salt (optional)
1 c. chopped nuts
Maraschino cherries
Shredded coconut

Cream together shortening, sugar, eggs and pineapple juice. Combine with creamed ingredients the flour, baking powder, baking soda and salt. Add the chopped nuts. Spread in a jelly roll pan that is greased.

TOPPING:

Take 1 cup of the pineapple - combine with 1 can coconut and set aside.

Spread the coconut and pineapple mixture over top - space halved cherries over top. Bake at 350 degrees for 20-30 minutes.
