COCONUT CARAMEL SQUARES 
2 1/4 c. flour, divided
1 c. melted butter
1/2 c. powdered sugar
2 c. packed brown sugar
2 tsp. vanilla extract
4 eggs
Juice of 1 lemon
1 tsp. baking powder
1 1/2 c. shredded coconut

Preheat oven to 350 degrees. In bowl, using hands or mixer, combine 2 cups of the flour with butter and powdered sugar to form soft dough. Spread into 9 x 13 inch pan. Bake for 20 minutes or until set. In another bowl, beat together brown sugar, vanilla, eggs, and lemon juice. Stir in remaining 1/4 cup flour, baking powder, and coconut. Pour on top and bake until set.
