CHICKEN KABOBS | |
4 skinless, boneless, chicken breast halves, flatten, cut into 3 strips 1/2 c. wine vinegar 1/2 c. tomato juice 1 tbsp. brown sugar 1 tbsp. chopped sweet onion 2 tbsp. oil 2 cloves minced garlic 1/2 tsp. dried oregano 1/2 tsp. pepper 2 sm. zucchini, cut in 1/2 inch slices 1 lg. red bell pepper, cut in 1 inch squares Combine vinegar, tomato juice, brown sugar, onion, oil, garlic, oregano, and pepper in jar; cover and shake. Place zucchini, pepper and chicken in bowl. Pour marinade over and refrigerate for 1 hour. Thread on skewers; reserve marinade. Broil 3 to 5 inches from heat for 8 to 12 minutes. Turn and brush occasionally with marinade. Makes four servings. |
