RED CABBAGE 
1 medium red cabbage
1 tbsp. butter
pinch of salt, pepper, nutmeg
1 tbsp. sugar
1 tbsp. onion, finely chopped
2 c. hot water
1 apple, peeled and sliced fine
5 or 6 cloves
1 tbsp. vinegar
1/3 c. raspberry jelly

Slice cabbage and soak in cold water. Heat butter in saucepan. Add cabbage, salt, pepper, nutmeg, sugar and onion. Simmer for about 20 minutes or until mixture begins to cook a little dry. Add hot water, apple, cloves and vinegar. Cover and cook slowly until tender. Add raspberry jelly.

Makes 6 servings.
