1 stick butter
1 c. uncooked instant oatmeal
1 1/2 c. boiling water
1 1/2 c. flour
1 tsp. salt
1 tsp. baking soda
2 tsp. cinnamon
2 beaten eggs
1 c. brown sugar
1 c. white sugar

Break stick of butter into small pieces. Stir in 1 cup uncooked instant oatmeal. Pour boiling water over - stir until butter melts. Mix together flour, salt, baking soda, cinnamon. Add to oatmeal mixture. Add beaten eggs, brown sugar, and white sugar. Beat, pour into large greased baking pan. Bake at 350 degrees for 30 minutes in a 13 x 9 inch pan.

TOPPING:

Brown sugar
Shredded coconut
Juice of 1 lemon

When cake is done, sprinkle (while hot) with brown sugar, shredded coconut and squeeze the juice of one lemon over all.
