MORNING GLORY MUFFINS 
2 1/2 c. sugar (or less)
4 c. flour
4 tsp. cinnamon
4 tsp. baking soda
1 tsp. salt
1 c. shredded coconut
1 c. raisins
4 c. shredded carrots
2 apples, shredded
1 c. walnuts, chopped
6 eggs
2 c. vegetable oil
3 tsp. vanilla

Sift dry ingredients in large bowl. Add fruit, nuts and stir. Add eggs, oil, vanilla. Spoon into cupcake tins. Bake 375 degree preheated oven for 20 minutes. Store 24 hours for flavor. 20 large muffins or 40-50 medium muffins.
