ZUCCHINI SAUSAGE PIE (Quiche) 
1/2 lb. Italian sausage, cooked, mild
1 med. to lg. zucchini, sliced
1 onion, diced
4 eggs
1/2 c. grated cheese
1/4 c. Ricotta cheese
Diced Mozzarella, optional

Grease 9 1/2 inch pie pan. Slice sausage and spread over bottom. Saute onion and zucchini in a little oil, just to soften. Drain well and add to pie pan. Beat eggs, grated cheese and Ricotta. Pour over ingredients in pan and top with Mozzarella, if desired. Bake 350 degrees for 30 minutes or until knife inserted in the middle comes out clean. Let stand 10 minutes before serving. Serves 6.
