QUICK PIE CRUST FOR QUICHE 
1 1/4 c. vegetable shortening, chilled
3 c. flour
2 tsp. sugar
1 egg
5 tbsp. water, cold
1 tbsp. vinegar, white

Cut shortening into pieces into processor bowl with flour and sugar. Pulse until mealy.

Add egg beaten in water and vinegar and process until a mass of soft dough.

Separate into 3 parts and store in refrigerator for several days to use as wanted or for several weeks in freezer.

To use, roll out on well floured pastry board. Bake at 375 degrees for 15-20 minutes until light brown and fill with your favorite quiche filling, eggs, fish, or whatever or fruit.
